Sometimes I Can Cook

I made a really yummy and easy roast tonight. I've done this twice now and it has turned out perfectly each time.

You preheat your oven to 500, put your roast in a baking dish, rub it down with steak rub or salt and pepper or whatever, put it in the oven and reduce the temperature to 475. Let it cook for 7 minutes per pound (about 17 minutes for the ones I normally get at Costco) and then shut off the oven. DO NOT OPEN THE DOOR. Just let it sit in there for two and a half hours.

Take it out and carve it into thin slices and eat it.

It always comes out perfectly cooked and tender and juicy. Yum!
